David Dennison, originally from Ballymore Eustace, Kildare, arrived in Waterford over twenty years ago. Having bought the building on High Street, the Viking main street, The Wine Vault Restaurant & Shop opened for business in 1993. The building epitomises the eight centuries of wine in Waterford. The brick vaulting of the wine shop dates from the mid 18th Century when the famous Gallwey family owned the building and operated it as a bonded warehouse, brimmed full of imported Brandy, Geneva, Port, Madeira, Claret, Hock & Malmsey. Archaeological excavations on the site revealed 13th Century Bordeaux wine jars.

Over the years the Restaurant and Wine Shop developed and 1996 saw the launch of David Dennison Fine Wines, a wholesale wine distribution company to supply restaurants, hotels and the corporate market.

Our friends in the winemaking world are in the main owners of small vineyards who strive each year to achieve the highest quality wines. They take great pride in what they do and quality is something, which we very rarely need to question. We sincerely hope that this is a sentiment that you share also.
